Here are some artists who infuse life into paper by cutting, folding and assembly, mostly without any glue.
Eric Joisel — Figurines

Eric Joisel is a French artist who makes human figures by wet folding. Each of the models below was folded from a single sheet of paper, without glue!

Meenakshi Mukerji — Modular Origami

Meenakshi Mukerji is an artist of Indian origin in USA who assembles intricate polyhedral models from multiple pieces of paper without glue. Click on any model to visit her gallery:

Modular origami as an art form was popularized through books in 1980s by Tomoko Fuse from Japan. Today, it is pursued by dozens of artists worldwide, with over ten good books on the subject. Ingeborg de Wolff has assembled hundreds of models from all these books (check out his galleries).

Technique: Meenakshi Mukerji has written a book: Marvelous Modular Origami (92 pages, 2007). Alternately, you may start with models made out of Sonobe units, as described in section "Instructions and Diagrams" at Modular Origami.

Vincent Floderer — Crumpling

Eric Gjerde — Tessellations

Eric Gjerde makes tessellations from single sheets of paper. Check out his Gallery at Flickr:

Ingrid Siliakus — Paper Architecture

Ingrid Siliakus first discovered paper architecture from Prof. Masahiro Chatani (architect and professor in Japan) who popularized this art form through a series of books in 1980s and 1990s. Intrid has taken paper architecture to new heights with intricate designs:
